How to Make Easy Chicken Enchilada Casserole

  • Preheat your oven to 350°F (175°C) so it's ready for your casserole.
  • In a skillet, heat canola oil over medium heat. Sauté garlic, jalapeño, and diced onion until the onion is translucent, about 5-7 minutes.
  • Stir in shredded chicken, diced green chiles, paprika, salt, pepper, and sour cream until well combined. Cook for a couple of minutes until warmed through.
  • Spread a layer of green enchilada sauce on the bottom of your casserole dish to keep the tortillas moist.
  • Place half of the halved corn tortillas over the sauce, then add half of the chicken mixture. Sprinkle with a layer of grated cheese. Repeat layers until all ingredients are used, finishing with cheese on top.
  • Pour any remaining enchilada sauce over the top layer of cheese.
  • Cover the casserole with foil and bake for about 25 minutes. Then, uncover and bake for an additional 15 minutes until bubbly and golden brown.
  • Sprinkle fresh cilantro on top before serving for added freshness.
