For the Dip

  • 1 lb Ground Beef can be substituted with ground turkey
  • 8 oz Cream Cheese softened
  • 12 oz Processed Cheese cubed
  • 0.5 cup Sour Cream add to the mixture when it cools
  • 10 oz Canned Tomatoes with Green Chilies preferably Ro-Tel
  • 0.25 tsp Garlic Powder

Optional Toppings

  • Chopped Green Onions for topping
  • Shredded Cheese mix of cheddar and Monterey Jack
  • Sour Cream for serving

How to Make Easy Rotel Dip

  • Heat a large skillet over medium-high heat and add the ground beef. Crumble it while cooking for about 6-8 minutes until it’s fully browned.
  • Drain excess fat from the cooked beef and place it on a paper towel-lined plate.
  • In the same skillet, reduce the heat to low and add the softened cream cheese. Stir constantly for about 2 minutes.
  • Gradually incorporate the cubed processed cheese in batches, stirring continuously.
  • Once the cheeses are fully melted, mix in the cooked ground beef and pour in the canned tomatoes with green chilies.
  • Allow the mixture to heat gently for about 1 minute while stirring.
  • Off the heat, gently fold in the sour cream.
  • Transfer the dip to a slow cooker set on warm to keep it creamy.

Notes

For best results, use room-temperature cream cheese to avoid lumps. Stir regularly if using a slow cooker to maintain texture.
