How to Make French Onion Soup with Beef

  • Heat oil in a heavy pot over medium-high heat. Add the beef stew meat and brown it on all sides, about 3-4 minutes per side, then set aside in a bowl.
  • Pour off excess fat, leaving about 1 tablespoon in the pot. Use 1 cup of beef stock to deglaze, scraping up any flavorful brown bits stuck to the bottom.
  • Melt butter in the pot. Add the sliced onions and sugar, cooking over medium heat for 30-40 minutes until they turn deeply golden and caramelized. Stir occasionally.
  • Add minced garlic to the onions and let it cook until fragrant, about 2 minutes. Sprinkle in flour and stir for 1-2 minutes. Then pour in the deglazing mixture, the remaining beef stock, white wine, Worcestershire sauce, bay leaf, and pepper, stirring everything together.
  • Bring the soup to a gentle simmer, cover the pot, and reduce the heat. Cook for about 2 hours until the beef is tender, skimming off any fat or foam from the top as necessary.
  • Ladle hot soup into oven-safe bowls, top with toasted baguette slices, and sprinkle generously with Gruyere cheese. Broil for 2-3 minutes until the cheese is melted and bubbly.
