  • 2 cups Bell Peppers mixed colors, chopped
  • 1 large Zucchini sliced
  • 1 large Red Onion sliced
  • 2 medium Carrots sliced thinly
  • 2 cups Broccoli Florets can substitute with green beans

  • 1/4 cup Fresh Parsley chopped
  • 2 pieces Lemon Wedges for serving

How to Make Garlic Lemon Chicken Thighs

  • Preheat the oven to 425°F (220°C).
  • Whisk together the marinade by combining olive oil, lemon juice, minced garlic, Italian seasoning, salt, and pepper in a bowl.
  • Marinate the chicken thighs in the garlic-lemon mixture for at least 15 minutes.
  • Prepare your vegetables by chopping bell peppers, zucchini, red onions, carrots, and broccoli.
  • Arrange the marinated chicken thighs skin-side up on a large baking sheet, surrounded by the prepared vegetables.
  • Roast in the oven for 30-35 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
  • Serve hot, garnished with freshly chopped parsley and lemon wedges on the side.
