How to Make Irish Beef Stew

  • Season the beef chuck generously with kosher salt and freshly ground black pepper. In a large Dutch oven, sear the beef in batches until it's beautifully browned, about 10 minutes total. Remove and set aside.
  • In the same pot, add the remaining olive oil and toss in the onions, carrots, and celery. Sauté for about 5 minutes, stirring occasionally, until they start to soften. Add the garlic and cook for an additional minute, until fragrant.
  • Return the browned beef to the pot, along with all the juices. Add the potatoes, low-sodium beef broth, Guinness, and fresh thyme. Scrape the bottom of the pot to lift the flavorful browned bits.
  • Bring the mixture to a gentle boil, then reduce the heat to maintain a delicate simmer. Cover and let it cook for about 30 minutes, or until the beef is tender and the potatoes are soft.
  • Serve with a sprinkle of fresh parsley for a delightful touch.

Notes

Allow the stew to sit off the heat for a few minutes before serving to let the flavors meld.
