Ingredients
  

For the Potatoes

  • 2 pounds red potatoes cut into 1-inch chunks
  • 3 tablespoons olive oil or avocado oil
  • to taste salt
  • to taste pepper

For the Topping

  • 1 cup grated Parmesan cheese use grated for even coverage
  • 3 cloves fresh garlic minced
  • 1.5 teaspoons fresh rosemary optional; substitute with Italian seasoning if needed
  • 1/4 cup fresh parsley chopped, for garnish

Preparation

  • Preheat your oven to 400°F (200°C). Prepare a rimmed 18 by 13-inch baking sheet with non-stick spray and flour.
  • Toss the red potatoes in a large bowl with olive oil until evenly coated. Add Parmesan, rosemary (if using), salt, and pepper.
  • Spread the potatoes in a single layer on the prepared baking sheet. Bake for 30 minutes.
  • Remove the baking sheet from the oven and add minced garlic. Toss to combine the flavors.
  • Return the baking sheet to the oven and bake for an additional 15 minutes.
  • Sprinkle chopped parsley over the finished potatoes and serve immediately.

Notes

For an extra flavor twist, add a squeeze of lemon juice before serving. Store leftovers in an airtight container for up to 3 days. Freeze for longer storage.
