For the Finish

Preparation

  • Chop the medium yellow onion, large carrots, celery ribs, and baby potatoes into bite-sized pieces. Layer them in your slow cooker.
  • Unwrap the corned beef brisket and place it on the vegetables. Coat with kosher salt, black pepper, and pickling spice. Add thyme sprigs and bay leaves.
  • Pour enough water to cover the meat and vegetables, leaving some space to avoid overflow.
  • Set the slow cooker on low for 7–8 hours or on high for 4.5 hours until the beef is fork-tender.
  • Add the chopped green cabbage once the beef is tender. Cook on high for 45–60 minutes until soft.
  • Remove the corned beef, slice against the grain, and serve with the vegetables.

Notes

Drizzle with mustard for an extra flavor kick. Ensure adequate water levels during cooking for juiciness.
