Ingredients
  

  • - 12 oz linguine or penne pasta
  • - 1 lb large shrimp peeled and deveined
  • - 4 tablespoons unsalted butter
  • - 4 garlic cloves minced
  • - ¼ teaspoon red pepper flakes optional
  • - 1 cup heavy cream
  • - ½ cup grated Parmesan cheese
  • - 1 cup shredded mozzarella
  • - Zest and juice of 1 lemon
  • - ½ cup white wine or chicken broth
  • - Salt and pepper to taste
  • - 2 tablespoons fresh parsley chopped
  • - Olive oil for greasing

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a 9x13 baking dish.
  • Cook pasta until al dente. Drain, reserve ¼ cup of water.
  • Sauté garlic in butter for 1 minute. Add shrimp, cook until pink, remove.
  • Deglaze with wine or broth, add lemon zest, cream, Parmesan, and pasta water. Simmer.
  • Add pasta and shrimp to sauce. Toss and transfer to baking dish.
  • Top with mozzarella. Bake 15–20 minutes until bubbly. Broil 2 mins for a crisp top.
  • Garnish with parsley and serve hot.

Notes

- Make ahead and refrigerate until ready to bake
- Reheat with splash of broth or cream
- Add spinach or sun-dried tomatoes for variety
