How to Make Simple Chicken Quesadillas

  • In a small bowl, combine the chili powder, salt, garlic powder, and cumin. This fragrant blend will elevate your chicken and vegetables. Set aside half for later use.
  • Take your cooked chicken and generously coat it with half of the spice mix you just prepared. This will infuse it with flavor, ensuring every bite is delicious.
  • In a skillet, heat olive oil over medium heat. Add onions and bell peppers along with the remaining spice mix. Sauté until tender and vibrant, about 6-8 minutes. If you like a little kick, swirl in some hot sauce and chopped cilantro before mixing with the chicken.
  • On each whole wheat tortilla, sprinkle a layer of cheese, followed by the chicken-vegetable mixture, and then another layer of cheese. Fold the tortilla in half to secure the treasures inside.
  • Heat a little oil in the same skillet and cook the quesadillas for about 4 minutes on each side or until golden brown and crispy. Your cheese should be perfectly melted and oozing out if you peek inside!
