Ingredients
  

  • **Soup base**
  • - 2 tbsp butter
  • - 1 cup finely diced onion
  • - 7 garlic cloves minced
  • - 3 oz chopped sun-dried tomatoes
  • - 3/4 cup dry white wine or chicken broth + lemon juice
  • **To finish**
  • - 4 cups shredded cooked chicken
  • - 1 tsp Italian seasoning
  • - 1 tsp garlic powder
  • - 1 tsp onion powder
  • - 1/2 tsp garlic salt
  • - 1/2 tsp paprika
  • - 32 oz chicken broth
  • - 1/2 cup heavy cream
  • - 1/2 cup grated parmesan
  • - 2 cups chopped fresh spinach

Instructions
 

  • Melt butter and cook onions until golden (10 mins).
  • Add garlic and tomatoes; sauté 3–4 mins.
  • Pour in wine and deglaze the pot. Simmer 2–3 mins.
  • Add chicken, seasonings, and broth. Simmer 10 mins.
  • Reduce heat. Stir in cream, parmesan, spinach.
  • Heat through, then rest 5 mins before serving.

Notes

- Use coconut cream + nutritional yeast for dairy-free
- Freeze before adding cream for best texture
- Store in fridge up to 4 days
