Cooking Steps

  • Prep Chicken: Start by patting the chicken thighs dry with a paper towel. In a bowl, mix together the salt, garlic powder, paprika, chili powder, onion powder, black pepper, and brown sugar. Coat the chicken evenly with this flavorful rub, ensuring each piece is well-covered.
  • Temperature: Allow the seasoned chicken to rest at room temperature for about 10-15 minutes.
  • Grill Setup: Preheat your grill by heating one side to high (400-450°F) while keeping the other side low or off. Consider using a wood chip packet on the hot side.
  • Cooking Process: Place the chicken skin-side down on the cool side of the grill. Cover and cook for 30-35 minutes, flipping every 10 minutes until the internal temperature reaches 160-165°F.
  • Apply BBQ Sauce: Brush BBQ sauce onto both sides. Cook for an additional 3-4 minutes per side until the internal temperature reaches 175°F.
  • Rest and Serve: Transfer the chicken to a plate and let it rest for about 5 minutes before serving.
