How to Make Smooth White Chocolate Truffles

  • Prepare Ganache: In a microwave-safe bowl, combine white chocolate chips and chopped white chocolate. Heat in 30-second intervals, stirring gently until the mixture is smooth and creamy.
  • Emulsify: Stir in room-temperature heavy cream and vanilla extract until the ganache is glossy and well mixed.
  • Chill: Cover the ganache and refrigerate for 2-3 hours until firm but still pliable.
  • Scoop: Line a tray with parchment paper. Use a scoop or two spoons to form 1-inch balls and place them on the tray.
  • Melt Coating: Melt additional chopped white chocolate using shorter intervals in the microwave. Allow it to cool slightly, ideally to 85-90°F.
  • Coat Truffles: Dip each truffle into the melted chocolate and gently tap off the excess. Quickly add your chosen toppings.
  • Set & Finish: Allow the truffles to set at room temperature until firm. Drizzle with more melted chocolate and dust with powdered sugar before serving.

Notes
