Ingredients
  

For the Chicken

  • 1 pound Chicken Breasts Boneless and skinless
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Black Pepper Freshly ground
  • 4 tablespoons Cornstarch For crispy coating

For the Sauce

  • 1 cup Chicken Broth Or vegetable broth
  • 2 tablespoons Mirin Or sake and sugar
  • 1/4 cup Soy Sauce Low-sodium recommended
  • 2 tablespoons Rice Vinegar Or apple cider vinegar
  • 2 tablespoons Brown Sugar Or coconut sugar
  • 1.5 tablespoons Cornstarch To thicken sauce
  • 1 tablespoon Fresh Ginger Minced; or substitute with ground ginger
  • 3 cloves Garlic Minced; fresh preferred
  • 1 teaspoon Sesame Oil Adds nutty flavor

For the Vegetables

  • 1 medium Onion Diced
  • 2 cups Broccoli Cut into small florets
  • 1 medium Red Bell Pepper Sliced
  • 2 stalks Green Onions Sliced for garnish

Instructions
 

Cooking Instructions

  • Slice chicken breasts into 1-inch strips. In a mixing bowl, toss with garlic powder, black pepper, and 4 tablespoons of cornstarch to coat.
  • Dice the onion, cut broccoli into small florets, and slice the bell pepper.
  • In a small bowl, whisk together chicken broth, mirin, soy sauce, rice vinegar, brown sugar, minced ginger, garlic, sesame oil, and 1.5 tablespoons of cornstarch.
  • Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Cook chicken in batches for about 4 minutes per side until golden brown. Remove and set aside.
  • Add diced onion to the skillet and sauté for 1 minute. Then add broccoli and bell pepper, cooking for an additional 3 minutes until tender-crisp.
  • Return the cooked chicken to the skillet. Pour in the prepared teriyaki sauce and stir well. Increase the heat to thicken the sauce for 1-2 minutes.
  • Garnish with sliced green onions before serving hot over rice or noodles.

Notes

Leftovers can be stored in an airtight container for up to 4 days. Reheat gently with a splash of broth.
