Ingredients
  

For the Chicken Marinade

  • 1 pound Chicken Thighs Skinless and boneless
  • 2 tablespoons Olive Oil Can substitute with avocado oil
  • 1 teaspoon Oregano Dried works best
  • 1 teaspoon Garlic Powder Fresh garlic can be used
  • 1 teaspoon Salt Adjust for dietary needs
  • 1 teaspoon Pepper Freshly cracked for better flavor

For the Creamy Feta Tzatziki

  • 1 cup Greek Yogurt Can substitute with sour cream
  • 1/2 cup Feta Cheese Low-fat option available
  • 2 tablespoons Lemon Juice Best fresh

For the Toppings and Wrap

  • 1 cup Cherry Tomatoes Any seasonal vegetable can substitute
  • 1 large Cucumber Pickled cucumber is an alternative
  • 1/2 cup Red Onion Sweet onion can be used instead
  • 4 pieces Pita Bread Whole grain versions are healthier

Steps

  • In a bowl, combine olive oil, oregano, garlic powder, salt, and pepper. Whisk together until well blended. Add chicken thighs, coating them evenly. Marinate for at least 30 minutes or ideally overnight for maximum flavor.
  • Heat a skillet over medium-high heat. Place the marinated chicken in the skillet and cook for 5-7 minutes on each side until golden brown and the internal temperature reaches 165°F (75°C). For a smokier flavor, grill the chicken instead!
  • In a separate bowl, mix Greek yogurt, crumbled feta, lemon juice, minced garlic, salt, and pepper until smooth. Stir in dill, if desired, for an extra burst of flavor. Chill in the fridge while you assemble the gyros.
  • Once the chicken is cooked, slice it into strips. Take warm pita bread and spread a generous amount of tzatziki on it. Layer chicken strips and top with cherry tomatoes, cucumber, and red onion. Roll the pita tightly and serve.

Notes

Garnish with fresh dill or mint for additional flavor. Store leftovers in an airtight container for up to 3 days.
