Ingredients
  

For the Beef

  • 2-3 pounds Corned Beef Brisket

For the Vegetables

  • 1 large Onion quartered
  • 4 cloves Garlic minced
  • 1 small head Cabbage cut into 6 wedges
  • 3 medium Potatoes peeled and quartered
  • 3 medium Carrots thickly sliced

For the Broth

  • 2 leaves Bay Leaves
  • 1 teaspoon Black Peppercorns
  • 0.5 teaspoon Mustard Seeds
  • 0.5 teaspoon Coriander Seeds
  • 4 cloves Whole Cloves
  • Salt and Pepper to taste

Directions

  • Start by placing the corned beef brisket in a large pot and adding enough water to cover it entirely.
  • Toss in the quartered onion, minced garlic, bay leaves, and spices including black peppercorns, mustard seeds, coriander seeds, whole cloves, and a pinch of salt and pepper.
  • Bring the pot to a boil, then reduce the heat to low and cover. Let it simmer for 2 to 2.5 hours until the beef is fork-tender.
  • Carefully add the quartered potatoes and sliced carrots to the pot. Allow them to cook for an additional 10-15 minutes until they’re tender yet firm.
  • Place the cabbage wedges on top of the beef and vegetables. Cook for another 15-20 minutes until the cabbage is tender but still holds its shape.
  • Remove the corned beef and vegetables from the pot. Slice the brisket against the grain and serve warm with the veggies.

Notes

Garnish with fresh parsley for extra flavor. Store leftovers in an airtight container for up to 3 days.
