  • 1 pound carrots Whole orange or rainbow carrots preferred.
  • 2 tablespoons extra-virgin olive oil Promotes caramelization.
  • 2 tablespoons honey Can substitute with maple syrup.
  • 1 teaspoon sea salt Adjust to taste.
  • 1/2 teaspoon freshly ground black pepper Use more or less to taste.
  • 2 tablespoons chopped fresh parsley Optional, for garnish.

How to Make Honey Roasted Carrots

  • Wash the carrots thoroughly to remove any dirt. Slice them into 2-inch barrels, cutting thicker carrots vertically for even cooking.
  • In a large mixing bowl, toss the carrot pieces with extra-virgin olive oil, honey, sea salt, and freshly ground black pepper until beautifully coated.
  • Spread the seasoned carrots in a single layer on a parchment-lined baking sheet. Roast in a preheated oven at 425°F for 15 to 25 minutes, checking for fork-tenderness and light golden brown color.
  • Once roasted, remove the tray from the oven. Taste and adjust seasoning as needed, then garnish with chopped fresh parsley before serving warm.

Notes

Optional: Drizzle more honey before serving for extra sweetness. Store leftovers in an airtight container for up to 3 days.
