Preparation Steps

  • Wash and thoroughly dry your rainbow carrots, then preheat your oven to 375℉. Line a baking sheet with parchment paper for easy cleanup.
  • Cut off the tops of the carrots, if needed. Place the carrots neatly in a single layer on the baking sheet to ensure even roasting.
  • In a bowl, combine the balsamic vinegar, honey, olive oil, onion powder, garlic powder, and salt. Stir until fully blended and ready to coat your carrots.
  • Use your hands or a pastry brush to generously cover each carrot with the marinade. Make sure they’re evenly coated for maximum flavor!
  • Cover the carrots with foil and bake them for 30 minutes. This helps them steam and become tender while absorbing all that delicious sauce.
  • After 30 minutes, carefully remove the foil. Continue to bake for an additional 20 minutes until the carrots are tender and beautifully caramelized.
  • While the carrots are roasting, add all whipped ricotta ingredients to a food processor. Blend until creamy and smooth—this step should only take a minute or two.
