Ingredients
  

For the Chicken

  • 4 pieces Boneless Chicken Breasts can substitute with chicken thighs
  • 1/4 cup Honey or maple syrup/agave for vegan version
  • 2 tablespoons Lime Juice freshly squeezed recommended
  • 1 teaspoon Lime Zest omit if unavailable
  • 2 cloves Garlic minced
  • 1 teaspoon Ground Cumin or smoked paprika for different taste
  • to taste teaspoon Salt
  • to taste teaspoon Pepper

For the Rice

  • 1 cup Jasmine Rice can substitute with basmati or quinoa
  • 2 cups Chicken Broth or vegetable broth for vegetarian option

For the Avocado Mix

  • 1 medium Avocado best used fresh
  • 1/2 medium Red Onion finely chopped
  • 1/4 cup Fresh Cilantro for garnish
  • 1 tablespoon Olive Oil can substitute with avocado oil

For Serving

  • 1 lime Lime Wedges for garnish

Steps to Prepare

  • In a bowl, whisk together honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper until well combined.
  • Place boneless chicken breasts in a resealable bag or dish, pour the marinade over, and marinate for 30 minutes to 2 hours.
  • Rinse the jasmine rice under cold water until it runs clear. Cook the rice in boiling chicken broth for about 15 minutes.
  • Preheat your grill to medium-high heat. Grill the marinated chicken for 6-7 minutes on each side until fully cooked.
  • In a bowl, combine diced avocado, finely chopped red onion, fresh cilantro, and olive oil. Mix gently.
  • On a plate, layer the cooked jasmine rice, add grilled chicken, and finish with the creamy avocado mix. Garnish with lime wedges.

Notes

Marinate chicken longer for deeper flavor and use fresh ingredients for best taste. Watch the chicken with a meat thermometer to ensure it reaches 165°F.
