  • Sauté the Corn: Heat olive oil in a large skillet over medium-high. Add the corn and cook, stirring frequently, until it starts to char, about 5-7 minutes. Set aside to cool.
  • Prepare the Corn Mixture: In a large bowl, combine mayonnaise, lime juice, lime zest, garlic, Tajin, chili powder, and salt and pepper. Stir in the charred corn, cilantro, scallions, diced jalapeno, and cojita cheese.
  • Blend the Sauce: In a food processor, purée cilantro leaves with pickled jalapenos and 2 tablespoons of their juice until minced.
  • Make the Creamy Sauce: In a mixing bowl, combine mayo, sour cream, ranch seasoning, garlic powder, and salt. Stir well to combine. Then, pour in the cilantro mixture and lime juice, mixing until smooth.
  • Shape the Burgers: Divide the hamburger meat into 3.5-ounce portions and press them into 6-inch flour tortillas, creating an even layer. Season each with salt and pepper.
  • Cook the Smash Burgers: Heat a griddle or large skillet over high heat. Cook the tortillas, burger side down, pressing firmly for 2-3 minutes. Flip and cook for another 1-2 minutes.
  • Assemble the Tacos: Once the burgers are cooked, top with the street corn mixture, drizzle with creamy jalapeno sauce, and add hot sauce if preferred.
