For the Vegetables

  • 1 pound Small Red Potatoes Can substitute with Yukon gold or any waxy potato.
  • 4 medium Carrots Fresh, peeled, and cut into 3-inch pieces.
  • 1 large Green Cabbage Cut into wedges for even cooking.

For Serving

  • 1 tablespoon Whole Grain or Dijon Mustard Optional condiment.

  • Prepare the Pot: In a large Dutch oven, position the corned beef brisket with the seasoning packet. Pour in stout beer and enough water to cover the meat entirely.
  • Add Aromatics: Add cinnamon sticks, sliced garlic, bay leaves, and optional chili pepper to the pot. Bring the mixture to a simmer over medium-high heat for added flavor.
  • Reduce and Cook: Lower the heat to low, cover the pot, and let it cook for 4 to 5½ hours.
  • Rest the Beef: After cooking, carefully remove the beef from the pot and set it aside on a cutting board to rest.
  • Cook the Veggies: In the same flavorful broth, add small red potatoes and carrots. Cook for about 20 minutes.
  • Finish with Cabbage: After 20 minutes, introduce cabbage wedges to the pot and cook for an additional 10 minutes.
  • Slice and Serve: Slice the rested beef against the grain and serve alongside the vegetables.
