Preparation

  • Chop the onion, carrots, celery, and baby potatoes into bite-sized pieces, and layer them at the bottom of your slow cooker. This forms a flavorful base for your tender beef.
  • Place the corned beef brisket on top of the veggies. Generously season it with kosher salt and freshly ground black pepper before sprinkling the pickling spice all over the meat.
  • Now, lovingly lay the thyme sprigs and bay leaves atop the beef. Pour water into the slow cooker until it almost covers the meat—this keeps everything moist and flavorful!
  • Set your slow cooker to low and let it work its magic for 7-8 hours, or on high for 4.5 hours. You’ll know it’s done when the beef is fork-tender and bursting with flavor.
  • When the beef is tender, gently add the chopped cabbage to the pot. Cook on high for an additional 45 to 60 minutes until the cabbage is cooked to your liking—soft yet still holding a bit of crunch.
