  • 3-4 pounds Corned Beef Brisket Opt for one with a seasoning packet for added flavor.

For the Broth

  • 4 cups Unsalted Beef Stock Low-sodium broth is a great alternative for less salt.
  • 12 ounces Lager Beer Feel free to substitute with water or more beef stock.

For the Aromatics

  • 1 large Onion, diced Shallots can be used for a milder taste.
  • 6 Carrots, peeled and cut into large chunks You can skip these or replace with another root vegetable if you prefer.
  • 4 stalks Celery, cut into large chunks Consider using cabbage for a classic pairing with corned beef.

Instructions
 

  • Start by placing the diced onion, carrots, and celery at the bottom of your 8-quart slow cooker.
  • Gently place the drained corned beef brisket on top of the vegetables. Sprinkle the seasoning mix evenly over the brisket for maximum flavor.
  • Carefully pour in the beef stock, followed by the lager beer.
  • Cover the slow cooker and set it to cook on low for 8-9 hours.
  • Once cooked, remove the brisket and let it rest for a few minutes before slicing.

Notes

Serve with a dollop of mustard or horseradish for an extra kick. Store leftovers in the fridge or freeze for later.
