  • - Large soup pot
  • - Immersion blender or regular blender
  • Ladle

Ingredients
  

  • - 4 medium potatoes peeled and diced
  • - 1 onion diced
  • - 2 cloves garlic minced
  • - 2 tbsp butter
  • - 3 cups chicken or vegetable broth
  • - 1 cup milk or half-and-half
  • - ½ cup shredded cheddar cheese
  • - Salt & black pepper to taste
  • - Optional toppings: bacon green onions, sour cream, extra cheese

Instructions
 

  • Melt butter in a large pot. Sauté onions and garlic until soft.
  • Add potatoes and broth. Bring to a boil, then simmer 15–20 minutes.
  • Blend part (or all) of the soup for desired texture.
  • Stir in milk and cheese. Simmer until creamy.
  • Season to taste and serve with toppings of choice.

Notes

- Add herbs or paprika for extra flavor
- Use red or sweet potatoes for a twist
- Freeze before adding dairy
