Ingredients
  

For the Broth

  • 3 to 4 pounds bones mix of chicken, beef, or pork
  • 2 tablespoons vinegar apple cider or red wine vinegar
  • 1 onion chopped
  • 2 medium carrots chopped
  • 2 ribs celery chopped
  • 3 cloves garlic crushed
  • 2 bay leaves
  • 1 teaspoon whole peppercorns
  • 2 teaspoons sea salt or to taste
  • 1 small bunch optional herbs parsley or dill, fresh thyme, unpeeled fresh ginger

How to Make Bone Broth from Scratch

  • Preheat your oven to 425°F (218°C).
  • Spread the bones on a baking sheet and roast for about 30 minutes.
  • In your pressure cooker or slow cooker, combine the roasted bones, chopped onion, carrots, celery, garlic, bay leaves, whole peppercorns, and vinegar. Cover with 12 to 14 cups of water.
  • If using a pressure cooker, seal the lid and cook on HIGH PRESSURE for 3 hours (or 4 hours for mixed bones).
  • Allow the pressure to release naturally.
  • Strain the broth through a fine-mesh strainer into a large bowl. Add sea salt to taste and cool it fully before refrigerating or freezing.

Notes

Store in the refrigerator for up to 5 days or freeze for longer storage. Skim off surface fat for a cleaner broth if desired.
