Instructions
 

Making the Salad

  • Preheat the oven to 400 degrees F.
  • Whisk together olive oil, parsley, and garlic in a small bowl. Season with salt and pepper to taste.
  • Spread bread cubes in a single layer on a baking sheet. Stir in the olive oil mixture and gently toss. Bake for about 13-15 minutes until golden brown.
  • Combine olive oil, lemon juice, lemon zest, garlic, salt, and pepper in a small bowl to marinade the chicken.
  • Marinate the chicken in a Ziploc bag or bowl with the olive oil mixture for at least 2 hours. Drain the chicken after marinating.
  • Preheat the grill to medium-high heat.
  • Grill the chicken for about 4-5 minutes per side until fully cooked.
  • Whisk mayonnaise, buttermilk, Parmesan, garlic, lemon juice, Dijon, Worcestershire sauce in a medium bowl. Season with salt and pepper.
  • Assemble the salad with chopped romaine, grilled chicken, and crunchy croutons. Pour over the dressing and toss gently.
