Preparation

  • Blend together garlic, ginger, garam masala, coriander, turmeric, cumin, tomato paste, and kosher salt until smooth.
  • Mix half of the spice paste with whole-milk yogurt and coat the chicken breasts. Let marinate for at least 30 minutes.
  • Sauté chopped yellow onion and fresh red chiles in vegetable oil over medium heat until soft.
  • Add remaining spice paste and cook for 2-3 minutes until fragrant.
  • Stir in the tomato puree, a splash of water, and heavy cream. Simmer gently until thick.
  • Broil the marinated chicken on a wire rack for 10-12 minutes.
  • Cut the broiled chicken into bite-sized pieces and add to the sauce.
  • Cook until the chicken reaches an internal temperature of 165°F.
  • Stir in freshly chopped cilantro just before serving.
