Ingredients
  

  • - 1 lb lean ground beef
  • - 1 can 15 oz kidney beans, drained
  • - 1 can 15 oz black beans, drained
  • - 2 cans 14.5 oz diced tomatoes
  • - 1 medium onion diced
  • - 3 garlic cloves minced
  • - 2 tbsp chili powder
  • - 2 tsp cumin
  • - 1 cup chopped bell peppers
  • - 2 tbsp olive oil
  • - Salt and pepper to taste
  • ### Optional Toppings
  • - Sour cream
  • - Shredded cheddar cheese
  • - Fresh cilantro
  • - Sliced jalapeños
  • - Green onions

Instructions
 

  • Heat oil in a large pot over medium heat. Add onion; sauté 5 minutes. Add garlic; cook 1 minute.
  • Add beef; cook until browned (6–8 minutes). Drain fat.
  • Add beans, tomatoes, peppers, and spices. Stir well.
  • Bring to a simmer, cover partially, and cook for 30 minutes.
  • Serve hot with toppings.

Notes

- For a vegetarian version, replace beef with lentils or more beans
- Freezer-friendly and ideal for meal prep
- Simmer longer for deeper flavor
