Ingredients
  

For the Dough

  • 1 cup Warm Milk Heated to about 110°F
  • 2 tablespoons Instant Yeast
  • 2 large Eggs At room temperature
  • 4 cups All-Purpose Flour Can substitute with bread flour
  • 1/2 cup Granulated Sugar Can substitute with coconut sugar
  • 1/2 cup Unsalted Butter Melted
  • 1 teaspoon Kosher Salt Can substitute with sea salt
  • 1 teaspoon Baking Soda Optional

For the Filling

  • 1/2 cup Light Brown Sugar Can substitute with dark brown sugar
  • 2 tablespoons Ground Cinnamon Can add nutmeg or allspice
  • 1/2 cup Unsalted Butter Softened

For the Icing

  • 8 oz Cream Cheese Can substitute with mascarpone
  • 2 cups Confectioners’ Sugar Can use powdered coconut sugar
  • 1 teaspoon Pure Vanilla Extract Can use almond extract
  • 2 tablespoons Milk Or heavy cream

Instructions
 

Making the Cinnamon Rolls

  • In a greased bowl, mix warm milk and instant yeast together. Then, add in the eggs, flour, granulated sugar, softened butter, salt, and baking soda. Stir until you achieve a smooth, cohesive dough.
  • Flour your work surface and knead the dough for about 10-15 minutes until it's elastic and smooth.
  • Place the kneaded dough back into a greased bowl, cover it with a clean kitchen towel, and allow it to rise in a warm spot until doubled in size, approximately 1-2 hours.
  • In a mixing bowl, cream together light brown sugar, ground cinnamon, and softened butter until fluffy.
  • Once the dough has risen, punch it down slightly. Roll it out on a floured surface into a rectangle, about ¼ inch thick. Spread your cinnamon filling evenly across the dough.
  • Starting from one end, tightly roll the dough into a log. Use a sharp knife to cut the log into 12 equal pieces, placing them in a greased baking pan.
  • Cover the pan again and let the rolls rise for another 30-40 minutes until they have puffed up nicely.
  • Preheat your oven to 400°F and bake the rolls for 20-22 minutes, or until they are golden brown.
  • In a separate bowl, beat the cream cheese and confectioners’ sugar together. Gradually add in the milk and vanilla extract until you reach your desired icing consistency.
  • Once the rolls are out of the oven, generously spread the icing over the warm rolls. Serve immediately.

Notes

Optional: Sprinkle with chopped nuts for an added crunch.
