Ingredients
  

For the Base

  • 1 head Cabbage finely shredded
  • 2 cups Carrots shredded

For the Dressing

  • 1 cup Mayonnaise creamy base
  • 2 tablespoons Apple cider vinegar zesty tang
  • 1 tablespoon Dijon mustard depth and spice
  • 1 teaspoon Celery seeds extra flavor

Seasonings

  • 1 teaspoon Fine sea salt enhances flavor
  • 1 teaspoon Fresh ground black pepper adds complexity
  • 1 tablespoon Sugar or honey optional for sweetness

Instructions
 

Preparation

  • Quarter the cabbage, remove the core, then finely shred it and place it in a very large bowl.
  • Add the shredded carrots to the bowl and toss together gently.
  • In a separate bowl, mix mayonnaise, apple cider vinegar, Dijon mustard, celery seeds, salt, and pepper.
  • Pour two-thirds of the dressing over the cabbage and carrot mixture and mix until the veggies are well coated.
  • Chill in the refrigerator for about an hour or serve immediately.

Notes

For optimal freshness, prepare the coleslaw on the same day. Store in an airtight container for up to 3 days.
