Ingredients
  

For the Cheese Sauce

  • 1 stick Unsalted butter for richness
  • 1 teaspoon Kosher salt for seasoning
  • 1/4 cup All-purpose flour for thickening
  • 5 cups Whole milk for a creamy body
  • 1 teaspoon Mustard powder for tang
  • 1 teaspoon Freshly ground black pepper
  • 3 cups Sharp cheddar for classic flavor
  • 1 cup Gruyère cheese for nutty depth

For Topping

  • 1/2 cup Finely grated Parmesan for umami kick
  • 1 cup Panko breadcrumbs for crunch
  • 3 tablespoons Extra-virgin olive oil for browning

Instructions
 

Preparation

  • Preheat oven to 375°F and grease a 13" x 9" baking dish with butter.
  • Cook the elbow macaroni in boiling salted water until al dente, about 5 to 6 minutes, then drain.
  • In a saucepan over medium heat, melt the butter then whisk in the flour for 2 to 3 minutes.
  • Add milk and seasoning, whisking until combined and bring to a simmer for about 2 minutes.
  • Remove from heat and whisk in the shredded cheddar, Gruyère, and Parmesan until melted.
  • Fold in the cooked macaroni to coat it in the cheese sauce then transfer to the baking dish.
  • Mix panko breadcrumbs with olive oil and Parmesan, then sprinkle over the macaroni.
  • Bake for 25 to 30 minutes until bubbly and golden. Let cool for 10 minutes.
