For the Base

  • 1 large egg at room temperature
  • 1 tablespoon Dijon mustard

For the Flavor

  • 1 tablespoon white vinegar
  • 1 tablespoon lemon juice adjust to taste
  • 1/2 teaspoon fine sea salt adjust to taste
  • 1 teaspoon sugar optional

For the Creaminess

  • 1 cup extra light olive oil or neutral oil

Steps

  • In a tall container, add the large egg, Dijon mustard, white vinegar, lemon juice, and sea salt.
  • Carefully pour the extra light olive oil over the top of the mixture and let it settle for about 15 seconds.
  • Blend with an immersion blender at the bottom of the jar for about 10 seconds until emulsified, then gradually lift and tilt to incorporate all the oil.
  • Taste and adjust with more lemon juice, sugar, or salt as needed. Transfer to an airtight container and refrigerate.

Notes

For a delightful twist, add a pinch of garlic powder. Store in a refrigerator and consume within one week for the best flavor.
