How to Make Smoked Brisket

  • Start the Grill: Begin by igniting your Traeger grill on the Smoke setting (or Super Smoke for Timberline grills), keeping the lid open until the fire is well-established, which takes about 4 to 5 minutes.
  • Preheat: Close the lid and set the temperature to 225°F. Allow the grill to preheat for about 10 minutes.
  • Mix Seasonings: In a small bowl, combine garlic powder, onion powder, paprika, chili powder, kosher salt, black pepper, and brown sugar.
  • Season the Brisket: Generously sprinkle the seasoning mix onto all sides of the brisket, rubbing it in.
  • Grill the Brisket: Place the brisket fat side down on the grill grate. Cook it slowly until it reaches an internal temperature of 160°F, about 3 to 4 hours.
  • Make the Baste: Mix together the beer, apple cider vinegar, beef stock, and melted butter in a bowl.
  • Wrap the Brisket: Once it hits 160°F, carefully remove the brisket from the grill. Double wrap it in aluminum foil and pour the brisket baste around the meat within the foil packet.
  • Continue Cooking: Return the wrapped brisket to the grill and cook it until it reaches an internal temperature of 204°F, another 3 to 4 hours.
  • Rest: After reaching the final temperature, take the brisket off the grill, unwrap it from the foil, and let it rest for about 15 minutes.
  • Slice and Serve: Cut the brisket against the grain into thick slices and serve.
