Preparation

  • Make Vinaigrette: Start by mincing the garlic and juicing the lemons into a mixing bowl. Whisk together the lemon juice, garlic, dill, and olive oil, seasoning with salt and pepper to taste.
  • Cook Couscous: In a medium pot, heat a splash of olive oil and toast the couscous for 2-3 minutes until fragrant. Add boiling water, cover, and let it simmer for about 10 minutes until all liquid is absorbed. Allow to sit for 5 minutes to fluff.
  • Prepare Vegetables: Dice the tomatoes, onion, cucumber, and artichokes. Rinse the chickpeas.
  • Combine Ingredients: In a large bowl, mix together chopped cucumbers, tomatoes, onions, artichokes, and chickpeas.
  • Mix Salad: Once the couscous has cooled, add it to the vegetable mix along with fresh basil. Fold together and pour vinaigrette over the salad and toss to coat.
  • Finish with Cheese: Just before serving, sprinkle in the mozzarella, tossing lightly or placing it on top for presentation.
  • Serve: Enjoy chilled or at room temperature, letting the flavors shine!
