How to Make Fresh Vegetable Spring Rolls

  • Cook noodles: Follow package instructions to cook the vermicelli noodles. Drain and rinse them under cold water to cool.
  • Prepare workspace: Fill a large bowl with warm water and dampen a clean kitchen towel on a flat surface.
  • Soak wrapper: Take one rice paper wrapper and soak it in the warm water for about 15 seconds until pliable.
  • Add fillings: In the center of the wrapper, place a small amount of noodles, carrots, cucumber, tofu, jalapeño, mango, avocado, and herbs.
  • Roll tightly: Fold the sides of the rice paper over the filling, then roll from the bottom up, enclosing the mixture completely.
  • Repeat: Continue this process with remaining wrappers and fillings until all ingredients are used.
  • Serve: Enjoy your freshly made spring rolls immediately with peanut sauce for dipping.
