Ingredients
  

For the Rolls

  • 100 grams Vermicelli Noodles Can substitute with rice noodles or other gluten-free noodles.
  • 8 pieces Rice Paper Wrappers Soak until pliable.
  • 1 medium Carrot Julienned, optional substitutes include zucchini or bell peppers.
  • 1 medium English Cucumber Can also use any fresh cucumber or jicama.
  • 200 grams Extra-Firm Tofu Can substitute with tempeh or shrimp.
  • 1 small Jalapeño Pepper For milder option, use red bell pepper.
  • 1 medium Mango Alternatively, use pineapple or peach.
  • 1 medium Avocado Omit if preparing ahead to prevent browning.
  • 1 bunch Fresh Herbs (Basil, Mint, Cilantro) Use a mix for best flavor.

For the Peanut Sauce

  • 3 tablespoons Peanut Butter Can substitute with almond butter.
  • 2 tablespoons Soy Sauce Opt for tamari for gluten-free.
  • 1 tablespoon Maple Syrup Honey can replace if not vegan.
  • 1 tablespoon Lime Juice Fresh lime juice preferred.
  • 1 clove Garlic Can use garlic powder for milder flavor.

Instructions
 

How to Make Spring Rolls

  • Bring a pot of water to boil and cook the vermicelli noodles according to package instructions. Drain and rinse them under cold water until they are cool and chewy.
  • Set up your workspace with a shallow bowl filled with warm water and have a damp kitchen towel ready.
  • Dip one rice paper wrapper in the warm water for about 15 seconds until it’s pliable, then lay it flat on the damp towel.
  • In the center, place a small handful of noodles, julienned carrot, cucumber, tofu, jalapeño, mango, avocado, and a mix of fresh herbs.
  • Fold the sides of the wrapper over the fillings, then carefully roll it tightly from the bottom to the top.
  • Serve your spring rolls immediately, alongside the homemade peanut sauce.

Notes

Serve with a sprinkle of crushed peanuts for added crunch! These rolls can be enjoyed fresh or stored properly for later use.
