Ingredients
  

For the Base

  • 45 oz Fire-Roasted Tomatoes Adds smoky depth
  • 1 cup Tomato Sauce Enriches the broth

For the Flavor

  • 4 cups Beef Broth Stick to consistent brands for best taste
  • 1.5 tsp Worcestershire Sauce Adds umami flavor
  • 1 tbsp Italian Seasoning Provides rich herbal notes
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1 tsp Pepper

For the Finish

Cooking Instructions

  • Heat olive oil in a skillet over medium heat. Sauté onions until soft and translucent, then add ground beef. Brown for 8-10 minutes and drain excess grease.
  • Stir in minced garlic to the browned beef, cooking for another minute.
  • Cube the potatoes and slice the carrots and celery while the beef is browning.
  • Transfer vegetables, fire-roasted tomatoes, tomato sauce, beef broth, Worcestershire sauce, and spices into the crockpot. Mix well.
  • Add the browned beef and its juices to the mixture in the crockpot. Stir to combine.
  • Cover and cook on low for 6-8 hours or on high for 3-5 hours until vegetables are tender.
  • About 15-20 minutes before serving, add tomato paste, corn, and peas. Cook uncovered to heat through.
  • Remove bay leaves before serving. Enjoy!

Notes

Optional: Garnish with shredded cheese and a dollop of sour cream.
