Ingredients
  

For the Crostini Base

  • 1 loaf toasted baguette sliced

For the Whipped Feta

  • 4 oz feta cheese crumbles
  • 4 oz cream cheese softened
  • 4 oz cottage cheese

For the Toppings

  • 1/4 cup chopped pecans
  • 1 tbsp fresh rosemary chopped
  • 1 tsp cracked black pepper to taste

For the Hot Honey

  • 1/2 cup honey
  • 1 tbsp apple cider vinegar
  • 1 tbsp hot sauce sriracha preferred
  • 1 clove minced garlic
  • 1/2 tsp red pepper flakes optional

Preparation

  • Prepare the Hot Honey: Measure all ingredients for the hot honey into a small microwave-safe bowl. Heat in short bursts of 15-20 seconds, stirring well until it becomes syrupy and runny. Set aside for assembly.
  • Blend the Cheese Mixture: In the bowl of a food processor, combine the feta cheese, cream cheese, and cottage cheese. Pulse a few times to mix, then process until smooth and creamy, pausing to scrape the sides as needed.
  • Assemble the Crostinis: Take a spoon and spread the whipped feta generously over each toasted baguette slice. Aim for some texture with bumps and ridges to catch the hot honey later. Arrange them on a serving platter.
  • Add Toppings: Sprinkle the chopped pecans on top of each crostini and place a small sprig of fresh rosemary on each one. Drizzle the warm hot honey over all, finishing with a sprinkle of cracked black pepper.
  • Serve Warm: Present your crostinis with any remaining hot honey on the side for guests to drizzle more as they please.

Notes

Optional: Garnish with extra rosemary for a beautiful presentation.
