Ingredients
  

For the Base

  • 2 tablespoons Ghee rich, buttery flavor
  • 1 medium onion chopped
  • 3 cloves garlic smashed
  • to taste Salt
  • to taste Pepper
  • 2 stalks celery chopped
  • 2 medium carrots chopped

For the Soup

  • 15 ounces white beans undrained
  • 4 cups bone broth or vegetable broth
  • 1 cup water
  • 2 small lemons juiced
  • 2 leaves bay leaves

For the Finish

  • 1 cup orzo
  • 2 cups baby spinach
  • 1 teaspoon dried oregano
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons fresh dill snipped

Instructions

  • Heat ghee in a large soup pot over medium heat until fragrant.
  • Add onion, garlic, celery, and carrots. Season with salt and pepper and sauté until veggies soften, about 5 minutes.
  • Stir in the white beans and ½ cup of broth, sautéing for 2 minutes.
  • Transfer mixture to a blender and blend until creamy.
  • Pour pureed bean mixture back into the pot. Stir in 3-1/2 cups broth and 1 cup of water.
  • Add lemon juice, bay leaves, salt, and black pepper.
  • Let simmer for 20 minutes.
  • Add spinach and orzo, cooking until orzo is al dente.
  • Stir in parsley and dill just before serving.
  • Ladle into bowls and enjoy!

Notes

Optional: Garnish with extra fresh dill for added flavor and color.
