Ingredients
  

  • **Cake Batter:**
  • - 2¾ cups all-purpose flour
  • - ¾ cup caster sugar
  • - 3 tsp baking powder
  • - ¾ tsp baking soda
  • - Pinch of salt
  • - ½ cup vegetable oil
  • - 1½ tsp vanilla extract
  • - 2 cups buttermilk
  • **Frosting:**
  • - 2 cans coconut cream refrigerated overnight
  • - 2 tsp vanilla extract
  • - 1 tbsp powdered sugar
  • - Brown pink, and orange natural food coloring

Instructions
 

  • Preheat oven to 350°F (180°C). Line two 6” cake pans.
  • Mix dry ingredients in a bowl.
  • Whisk oil, vanilla, and buttermilk in another bowl.
  • Combine wet and dry ingredients until just mixed.
  • Divide batter, bake 30–45 mins, cool completely.
  • Level cake layers.
  • Whip coconut cream with vanilla and sugar until fluffy.
  • Divide frosting: leave some white, tint remaining.
  • Fill and frost cake with white cream.
  • Decorate snowman face with colored frosting.
  • Chill cake 2 hours before serving.

Notes

- Vegan version: replace buttermilk with soy milk + vinegar.
- Use gluten-free flour for allergies.
- For a chocolate version, sub part of flour with cocoa powder.
