  • 10 pieces dark meat chicken (drumsticks and thighs) Use a mix for juicy tenderness.
  • 2 teaspoons kosher salt
  • 1 tablespoon smoked paprika
  • 1 tablespoon Montreal chicken seasoning

For the Sauce

  • 2 tablespoons butter Melted.
  • 1/2 cup minced red onion
  • 1/2 cup flat leaf parsley Chopped.
  • 1 tablespoon garlic Minced.
  • 1/2 teaspoon red pepper flakes
  • 1 cup chicken stock
  • 1/3 cup fresh lemon juice
  • 1 cup Parmesan cheese Freshly grated.
  • 1/3 cup heavy whipping cream

Cooking Steps

  • Melt butter in a skillet over medium heat until bubbly.
  • Sauté minced red onion until fragrant, about 2 minutes.
  • Stir in chopped parsley and minced garlic.
  • Add fresh lemon juice and red pepper flakes.
  • Pour in chicken stock and Parmesan cheese, mixing well.
  • Add heavy whipping cream and allow the mixture to simmer for about 1 minute.
  • Season dark meat chicken with kosher salt, smoked paprika, and Montreal seasoning.
  • Pour the cooled sauce over the seasoned chicken in a baking dish.
  • Bake uncovered at 375°F for 1 hour and 45 minutes, flipping halfway through.
  • Broil the chicken skin side up until golden brown.
  • Baste the chicken in the remaining sauce before serving.

Notes
