For the Salsa

  • 28 ounces canned whole tomatoes drained and divided
  • 0.5 medium onion finely chopped
  • 1 clove garlic finely minced
  • 1-3 Tablespoons pickled jalapeño slices adjust to taste
  • 1 Tablespoon lime juice
  • 2 Tablespoons fresh parsley or cilantro chopped
  • to taste salt
  • to taste freshly ground black pepper

How to Make Cinco de Mayo Salsa

  • Chop half of the drained tomatoes. Place in a blender along with the chopped onion, minced garlic, pickled jalapeño slices, and lime juice. Blend for about 5 to 10 seconds until somewhat smooth.
  • Mix in the parsley, whole tomatoes, salt, and pepper. Blend for another 5 seconds or until salsa reaches desired consistency. Adjust seasonings as needed.
  • Transfer the salsa to a non-reactive bowl. Cover and refrigerate for at least one hour to allow flavors to meld.

Notes

Serve with freshly cooked tortilla chips for added crunch. Can be stored in an airtight container in the fridge for up to 3 days.
