Ingredients
  

For the Bean Base

  • 1 cup cooked black beans can substitute with pinto beans
  • 1 cup cooked black-eyed peas can substitute with canned peas

For the Fresh Veggies

  • 1 cup cherry tomatoes can use grape tomatoes
  • 1 cup corn kernels can use frozen or canned corn
  • 1 medium red bell pepper can substitute with green bell pepper
  • 1 small red onion can use green onion for milder taste
  • 1 small jalapeño pepper adjust amount for less spice

For the Dressing

  • 2 tablespoons lime juice lemon juice can be used
  • 2 tablespoons red wine vinegar apple cider vinegar can be used
  • 2 tablespoons olive oil can replace with avocado oil
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper
  • 1 tablespoon honey maple syrup for vegan option
  • 1 teaspoon salt
  • 1 teaspoon pepper

For the Creamy Addition

  • 1 medium avocado omit if not in season

For Garnish

  • 1/4 cup fresh cilantro can substitute with parsley

For Serving

  • 1 bag tortilla chips or use veggie sticks for a healthier option

Instructions
 

Preparation

  • In a large bowl, mix together the cooked black beans and black-eyed peas.
  • Toss in the cherry tomatoes, corn kernels, diced red bell pepper, chopped red onion, and minced jalapeño. Stir gently.
  • In a separate bowl, whisk together lime juice, red wine vinegar, olive oil, cumin, cayenne pepper, honey, salt, and pepper.
  • Pour the dressing over the bean mixture, folding gently to combine.
  • Gently fold in diced avocado and chopped cilantro. Season to taste.
  • If possible, refrigerate for at least 1 hour before serving.
  • Serve with crispy tortilla chips.

Notes

Let the cowboy caviar sit for at least an hour to enhance the flavor. Add avocado just before serving to prevent browning.
