Ingredients

For the Loaf

  • 1.5 cups all-purpose flour provides the base for a light, fluffy texture.
  • 1 cup granulated sugar adds sweetness and balances the tangy lemon flavor.
  • 0.5 cup unsalted butter ensures a rich, moist loaf; can be substituted with coconut oil if desired.
  • 3 large eggs act as a binding agent while also contributing to the loaf's richness.
  • 1 tablespoon baking powder helps the loaf rise and become airy.
  • 0.5 teaspoon salt enhances all the flavors in the dish.
  • 1 tablespoon lemon zest intensifies the lemon flavor for a bold punch.
  • 0.5 cup buttermilk makes the loaf tender and fluffy; can be replaced with milk and vinegar mixture.

For the Glaze

  • 1 cup powdered sugar the base of the glaze for its smooth sweetness.
  • 2-3 tablespoons fresh lemon juice adds a zesty kick and achieves the perfect pourable consistency in the glaze.

Instructions

How to Make Lemon Loaf with Glaze

  • Prepare the Glaze: In a medium bowl, combine 1 cup of powdered sugar with 2 tablespoons of fresh lemon juice. Whisk until smooth; adjust with more lemon juice for a pourable consistency.
  • Create the Loaf: Preheat your oven to 350°F (175°C). In another bowl, mix 1 ½ cups all-purpose flour, 1 cup granulated sugar, ½ cup softened unsalted butter, 3 large eggs, 1 tablespoon baking powder, ½ teaspoon salt, 1 tablespoon lemon zest, and ½ cup buttermilk until well combined.
  • Bake: Pour the mixture into a greased loaf pan and bake for about 50-60 minutes, or until a toothpick inserted comes out clean. The loaf should have a lovely golden brown exterior.
  • Cool Down: Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack. It's important to let it cool completely to ensure the glaze doesn't melt away.
  • Drizzle Glaze: Once cooled, drizzle your prepared lemon glaze generously over the loaf. Let it set for a few minutes before slicing!

Notes

Optional: Garnish with lemon zest for an extra touch of brightness! Store in an airtight container at room temperature for up to three days.
