Ingredients
  

For the Pasta

For the Sauce

  • 1/4 cup extra virgin olive oil Feel free to use infused oil for added taste.
  • 1 shallot, diced You can substitute with a small onion if needed.
  • 3/4 teaspoon fine salt Adjust to preference, especially if using salted pasta water.
  • 1/4 teaspoon crushed red pepper chili flakes Omit if you prefer a milder dish.
  • 4 cloves garlic, peeled and minced Try roasted garlic for sweetness.
  • 1/2 tablespoon maple syrup Honey can be used as an alternative.
  • 1 small lemon, zested and juiced Use fresh lemon for the best flavor.

For the Greens

  • 2 handfuls spinach, roughly chopped Substitute with kale for a different texture.
  • 1 handful fresh basil leaves, cut into ribbons You can use parsley or arugula for variety.

Cooking Instructions

  • Start by bringing a large pot of water to a rolling boil. Add your choice of pasta and cook according to package instructions until al dente, usually around 8-10 minutes.
  • In a 12-inch cast iron skillet, heat the olive oil over medium heat. Add diced shallots, salt, and crushed red pepper flakes, sautéing for about 5 minutes until the shallots are soft and translucent.
  • Lower the heat to a gentle simmer, then add minced garlic and maple syrup. Stir this lovely mixture for an additional 3 minutes, letting those flavors meld beautifully.
  • Once the pasta is cooked, drain it and add it directly to the skillet. Toss in the zest and juice of the lemon, stirring well to coat the pasta evenly.
  • Turn off the burner and gently fold in the roughly chopped spinach. Use tongs to toss everything together until the spinach is just wilted but still vibrant and green.
  • Serve the pasta warm. Garnish with fresh basil leaves, additional lemon zest, a sprinkle of crushed red pepper flakes, and a drizzle of extra virgin olive oil for that extra touch of goodness.

Notes

If desired, add grated Parmesan cheese for a creamy, savory finish.
