How to Make Lemon Sugar Cookies

  • Cream together the butter, sugar, and lemon zest in a mixing bowl. Use an electric mixer for about 1-2 minutes until the mixture is light and fluffy.
  • Add the lemon juice and the egg to the bowl. Beat again until fully combined.
  • Incorporate the flour, baking soda, and salt. Gently mix by hand with a spatula until just combined.
  • Chill the dough by covering the bowl with plastic wrap. Refrigerate for 30-60 minutes.
  • Preheat the oven to 350ºF. Remove the chilled dough from the fridge and get ¼ cup sugar ready in a separate bowl for rolling.
  • Scoop out the dough with a cookie scoop to form balls, rolling each one in the sugar. Place them 2 inches apart on a silicone-lined baking sheet.
  • Bake in the preheated oven for 11-13 minutes until edges turn faint golden.
  • Cool the cookies on the baking sheet for 5 minutes, then transfer them to a cooling rack.

Notes

Sprinkle with extra lemon zest before serving for an extra zesty twist. Allow the dough to chill to prevent spreading during baking.
