Ingredients
  

  • - 1 lb large shrimp peeled and deveined
  • - 1 red bell pepper sliced
  • - 1 yellow bell pepper sliced
  • - 1 green bell pepper sliced
  • - 1 large red onion sliced
  • - 2 tbsp olive oil
  • - 2 tbsp fresh lime juice
  • - 2 tbsp taco seasoning
  • - Salt and pepper to taste
  • - Tortillas for serving
  • - Optional toppings: avocado sour cream, cilantro, cheese

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet.
  • Slice bell peppers and onion; spread on sheet pan.
  • Toss shrimp with olive oil, lime juice, taco seasoning, salt, and pepper.
  • Add shrimp to the pan and mix with veggies.
  • Roast for 15–20 minutes, until shrimp are pink and veggies are tender.
  • Serve with warm tortillas and toppings of choice.

Notes

- Use pre-cooked shrimp to reduce cook time
- Add jalapeños for extra spice
- Serve over rice or quinoa for a fajita bowl
