How to Make Strawberry-Lemonade Bars

  • Preheat the oven to 350°F (175°C) and prepare a 9x13 inch baking dish with cooking spray.
  • Combine the melted butter, granulated sugar, lemon zest, all-purpose flour, and kosher salt in a food processor. Blend until the mixture resembles coarse crumbs.
  • Press the crust mixture evenly into the prepared baking dish. Ensure it's packed tightly.
  • Whisk together the eggs, egg yolks, granulated sugar, cornstarch, fresh lemon juice, and salt until smooth.
  • Pour the filling over the crust and bake for about 30-35 minutes or until the edges are lightly golden.
  • Cool the baked bars in the pan for about 15 minutes at room temperature, then refrigerate for at least 1 hour before cutting.
  • Dust with confectioners' sugar just before serving if desired.
