Ingredients
  

  • - 2 tablespoons olive oil
  • - 1 medium yellow onion diced
  • - 2 carrots diced
  • - 2 celery stalks diced
  • - 2 garlic cloves minced
  • - ½ tsp dried oregano
  • - ½ tsp dried basil
  • - ½ tsp salt
  • - ½ head green cabbage chopped
  • - 1 14 oz can diced tomatoes
  • - 4–6 cups vegetable broth
  • - 1–2 tbsp lemon juice
  • - ¼ cup chopped fresh parsley
  • - Cracked black pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5 minutes.
  • Add garlic, oregano, basil, and salt. Stir until fragrant.
  • Add cabbage and cook for 5 minutes.
  • Stir in diced tomatoes and broth. Simmer uncovered for 10–15 minutes.
  • Remove from heat. Add lemon juice, parsley, and pepper. Serve hot.

Notes

Adjust broth amount based on desired consistency. Use fire-roasted tomatoes for added depth.
