  • 1 cup Green salsa fresh or jarred
  • 2 cans Great Northern beans drained
  • 1 tablespoon Ground cumin
  • 1 tablespoon Chili powder
  • 1 cup Heavy cream or half-and-half
  • 4 cups Chicken broth or vegetable broth

For the Garnish

  • 2 whole Lime wedges
  • 1 bunch Fresh cilantro optional
  • 1 whole Sliced avocado

How to Make Ranch White Chicken Chili

  • Prepare Ingredients: Start by dicing the white onion and mincing the garlic. Take your chicken thighs, pat them dry, and season liberally with salt and pepper for that extra flavor.
  • Layer in the Pot: Place the seasoned chicken thighs at the bottom of your slow cooker, followed by the diced onion, minced garlic, and the mixture of ranch seasoning, ground cumin, and chili powder.
  • Add Other Ingredients: Gently pour in the green salsa, drained Great Northern beans, hatch green chiles, frozen corn, and chicken broth. Give everything a good stir to combine those luscious flavors!
  • Cook the Chili: Cover and cook on LOW for about 6-8 hours, or until the chicken is tender and easily shreddable.
  • Shred the Chicken: Once cooked, shred the chicken right in the pot using two forks, then stir everything together. Now, increase the heat to HIGH for the next step.
  • Add Creaminess: Stir in the heavy cream and allow it to cook for an additional 10 minutes until heated through and creamy.

Notes

For extra texture, you can add diced bell peppers during cooking. Always rinse canned beans before adding them to avoid thick chili.
