  • 0.25 cup Onion, diced Yellow or white onions work well
  • 2 cloves Garlic Fresh is best, but can substitute with garlic powder
  • 1 tablespoon Fresh Minced Ginger Ginger paste can also work
  • 10 oz Ground Chicken Ground turkey is a lighter option
  • 0.25 cup Tamari/Soy Sauce, low sodium Coconut aminos are a soy-free alternative
  • 2 tablespoons Thai Sweet Red Chili Sauce Can be replaced with sriracha for more heat
  • 1 lime Lime Juice Lemon juice can be used if lime is unavailable
  • 1 teaspoon Maple Syrup/Honey Agave is a vegan option
  • 0.33 cup Cashews, chopped Peanuts or sunflower seeds can be used
  • 0.25 cup Scallions, chopped Chopped onions can work in their place
  • 0.25 cup Cilantro, chopped Omit if you dislike cilantro
  • 0.25-0.5 cup Carrots, shredded Substitute with bell peppers if desired
  • 1 head Butter Lettuce Large leaf lettuces can also be used
  • Sesame Seeds Optional topping

Instructions
 

Preparation Steps

  • Heat sesame oil in a pan over medium-high. Add the diced onion; cook for 2-3 minutes until translucent, then stir in minced garlic and ginger, cooking for an additional 2 minutes until fragrant.
  • Add the ground chicken, breaking it up with a spatula. Season with salt and pepper, then cook until browned and fully cooked through, about 3-4 minutes.
  • In a small bowl, mix together the tamari, Thai sweet red chili sauce, lime juice, and honey to create a balanced sauce.
  • Pour the prepared sauce over the chicken mixture and add the chopped cashews. Reduce heat to low and cook for 2 more minutes.
  • Remove from heat and stir in shredded carrots, chopped scallions, and cilantro.
  • Take a lettuce leaf and fill it with a spoonful of the chicken mixture. Top with extra sauce and sesame seeds before serving.

Notes

For optimal freshness, assemble your wraps right before serving. Store any leftover filling in an airtight container for up to 3 days, keeping lettuce separate.
